The existence of vineyards is assumed since the time of the Burgundians, but the first official traces date from the 13th century, they were found in octroi payments in the franchises of Bonneville in 1279. The vineyard extended over nine communes between Chatillon and Bonne-sur-Menoge. The peak of the area was reached in 1870 with 630 ha of vines. The decline in production then began, and today the vineyard represents only about 20 hectares of vines shared between three communes. The AOC Savoy Ayse was created in 1973, it guarantees the origin and the conditions of production of the still white wine and the sparkling white wine.
Facing south, the sunny slopes at 450 m altitude under the Alps climate, benefits from the first slopes of the Chablais Massif made of molasse. Its terroir therefore benefits from a continental-montane climate and a soil composed of : - sediments of very old glaciers: layers of clayey and calcareous molasse - sediments of glacial waterfalls: red clay loaded with iron alumina (particularity of the "Fire")
